Summer Salad with Homemade Dressing

8 Cups local organic greens of any kind, baby greens, spinach etc.


Any salad vegetables to your liking. I like


Cucumber


Bell Pepper


Tomatoes


Beets, roasted or pickled 

Dressing

1/8-1/4 Cup Oil, I prefer Avocado but any oil is fine


1/8-1/4 Cup Vinegar, White, Balsamic or Apple are lovely choices


1 tsp-1 1/2tsp Dried Basil or 1Tbs. Fresh Basil


1/2tsp Dried Parsley


1/2 tsp-1tsp Italian Seasoning


1/2Tbs- 1Tbs Honey


Salt & Pepper to taste



Combine ingredients in sauce pan.


Simmer on Low for about 15 minutes.


Let cool then toss into salad mixture



Top Salad with favorite Diana's Sprouted Granola before serving. I like to use Original or Cherry



Try your salad wilted for easier digestion. Toss salad with dressing while warm.
